Sufrito Chicken & Potatoes

Pretty much every Friday night we go over to my In-laws for a family dinner. 

My mother in law is a fantastic cook. She puts so much heart and soul into everything she makes along with tons of flavor. This is delicious! 


Spice Mixture:

1 tsp. Garlic powder

1 tsp. Cumin

1 tsp. Baharat

1 tsp. Paprika

1 tsp. Turmeric

1 tsp. Hawaiig for soup

Salt & Pepper to taste

Sea Salt or Kosher salt

8 pieces of chicken 

(my MIL uses drumsticks, I used half of a whole chicken. So breast, neck for flavor, wings...)

10 potatoes, peeled and sliced in rounds

Boil the potatoes for about 10 minutes. This will help them soak in all the flavors and give them a better consistency. 


Spread the Sea Salt on each of your chicken pieces and let them sit for 15 minutes.

While you wait, create your spice mixture. 

After the 15 minutes pass you could dust off some of that salt and massage those spices into each chicken piece. The leftover spice mixture will go on the potatoes.

Strain the potatoes and pour on the rest of the spice mixture.  

Saute the chicken pieces so that they get a nice coloring on each side. 

Throw them in with your potatoes and cover with water. 

Bring it to a boil than cover and let it cook for an hour and a half to to hours on a medium to low heat. 

Goes great with a side of rice and a green veggie.
