Oatmeal Raisin Cookies

I feel like people either love or hate oatmeal raisin. 

Well, I Love them! Soft and chewy with a hint of nuttiness and then the soft, tart but sweet raisin. YUM! 

Ingredients:

1 c. Flour

1/2 tsp. Baking soda

1/2 c. Brown sugar, packed

1/4 c. Sugar

1/2 tsp. Cinnamon

1/2 c. Unsalted butter, softened to room temp.

1/8 tsp. Nutmeg

1/4 tsp. Salt

1 Tbsp. Honey

2 tsp. Vanilla

1 Egg

1 1/2 c. Oatmeal

2/3 c. Raisins

In a bowl mix in the flour, baking soda, nutmeg and salt.  

Beat together the butter and sugars. Add in the egg, vanilla and honey. Combine the dry and wet ingredients. Add in the oats and raisins. (The batter will be sticky). Refrigerate the batter for a minimum of 30 minutes, overnight is good too. 

 

When ready to bake, Preheat the oven to 350/180. Bake for 9-11 minutes.
