Best Homemade Pizza

Homemade pizza used to sound good to me but in reality it just never came close to pizza from a pizzeria. All that is about to change. This is the recipe!

Try it, you'll see.

Pizza Dough:

2 1/2 c. Warm water

1/4 c. Sugar

3 tsp. Instant yeast

1/4 c. oil

6 c. Flour

2 tsp. Salt

Pizza Sauce:

260 gr. Tomato paste and the same amount on water

1 small onion chopped

1 tsp. minced onion

1 tsp. chopped fresh basil

1/4 tsp. dried oregano

1/4 tsp. dried parsley

salt & pepper to taste

In a saucepan drizzle some olive oil and saute your chopped onions. Keep the flame low so you don't burn them. Once they start to look translucent add in your minced garlic.

Mix that around a bit but don't overcook the garlic. Add in your tomato paste and the water an mix well till combined. Throw in the rest of your spices and bring to a boil. Cover and simmer for 10 minutes. Add more water if you prefer a thinner sauce.

In a bowl, (if you have a mixer great. I do it all by hand) combine the water, sugar and yeast. All the mixture to sit for a few minutes until frothy. Add in the oil.

Add your flour 1 cup at a time. and over the last cup of flour you pour in add your salt and mix well.

The dough is quite sticky so add little bits of flour until you're happy with the consistency.

Grease a large bowl with olive oil and turn the dough around in it to be covered by the oil. Cover the bowl with plastic wrap and or a towel and let it sit at room temp for about an hour. Your dough will double.

Preheat the oven to 200/395 degrees.

Turn the dough out onto a well floured work space and play with it for a little. With a full recipe you will have a TON of dough. It freezes really well if you want to save some for another time.

Create your pies and then get some of that that great sauce on and of course lots of shredded mozzarella cheese.

I'd go crazy with the toppings but my kids will only eat plain or with green olives (not even black olives).

Bake for about 15-20 minutes.
